To me, as a child growing up in New York, Southern Fried Chicken came from one place, and only one place: those oiled cardboard buckets were fired by the colonel himself. But times have changed, and as often happens, recalling those fond childhood memories leads to disappointment and disillusionment. Said that, stylistically, it cannot be defective. So I figured that I could somehow manage to start the kernel and lead it to its final conclusion – that is, the deep flavor of the chicken; One layer free skin; Juicy, tender meat; And the crunchy, spicy paste – I might just be able to taste those first fleeting childhood fried chicken as I remembered them. Here is the result of my efforts.

Ingredients: –

2 tablespoons paprika

2 tablespoons freshly ground black pepper

2 teaspoons garlic powder

2 teaspoons dried oregano

1/2 teaspoon cayenne pepper

1 cup buttermilk

1 large egg

Kosher salt

One whole chicken, about 4 pounds, cut into 10 pieces or 3 1/2 pounds bone-in, skin-on breasts, legs, drumsticks, and/or wings

1 1⁄2 cups all-purpose flour

1⁄2 cup cornstarch

1 teaspoon baking powder

4 cups vegetable shortening or peanut oil

Steps to Make Southern Fried Chicken

In a medium-sized bowl, beat eggs with water. Add enough hot sauce so that the egg mixture is bright orange. In another bowl, combine flour and pepper. Cease the chicken with home season. Dip the seasoned chicken in the eggs, and then coat well into the flour mixture.

Heat the oil in a deep pot to 350 degrees Fahrenheit. Do not keep the pot filled with more than 1/2 of the oil.

Fry the chicken in oil till it becomes brown and crisp. Dark meat takes longer. It should take white meat for about 13 to 14 minutes, around 8 to 10 minutes.
